Bluestream Media - where did they get the date, time, IP, etc.???

Just recently posted a spam in spamcop.spam with the subject
Bluestream Media - Your January Health Tips x.
It has been heavily munged to remove any information that
may be used by the spammer ...
What concerns me greatly is that at the bottom of the spam
there was a date, an email address and an IP address.
The date was within the last few weeks. The IP address
was one that could have been related to the email address.
But the user's email address has not been active in years.
(Its currently just catching - and reporting - spam.)
It would appear that Bluestream Media is attempting to
provide information to substantiate the "opt-in" of an
email address with an IP and date/time.
The only thought that comes to mind ... is some kind of
harvesting from previous reports?
The IP address noted was not one of any MX (SMTP server),
but could have been one used by a SpamCop reporting user ...
Of course - it could have also been obtained from headers
that the user may have used on an outgoing email ...
but the address has not been used!
This opens up some pretty big concerns ...
what's the feeling from others on this?
(What am I or others here missing?)
