I didn't say white, I said whiter.  It is pretty much completely pink 
when it is raw but it changes colors a bit when you cook it.  I guess 
too I'm thinking of the little bits of gooey stuff that comes off that 
sort of seems white too.  It was mostly for comparison sake too, saying 
that smoked salmon looks pretty much exactly like raw salmon.
